YIELD: 6 DIRTY RICE
COOKING TEMP: 212F PORTION: 3/4 cp
COOKING TIME: 60 MIN COOKING PAN: SAUCE PAN
INGREDIENTS AMOUNTS PROCEDURES
| Oil : 1/2 cp 1. Cook oil and flour to make a brown
| Flour : 1/4 cp roux.
| Onions chopped : 1/2 cp 2. Add onions and cook until brown.
| Liver chicken : 1 lb 3. Finely chop livers. Add to roux
| Celery chopped : 1/2 cp with celery, green onions, green
| Green onions sliced : 1/2 cp peppers, parsley, and garlic. Cook
| Green peppers chopped : 1/2 cp for five minutes until livers turn
| Parsley chopped : 1/2 cp brown and vegetables are soft.
| Garlic minced : 1/4 ts 4. Add one-third of broth and cook for
| Beef broth : 2 3/4 cp 15 minutes.
| Rice white raw : 1 cp 5. In a separate pan, combine
| Pepper cayenne : 1 1/2 ts remainder of broth, rice, cayenne,
| Pepper black : 1/2 ts black pepper and salt. Cover and
| Salt : 1 ts simmer until rice is tender.
|. 6. Fold rice into vegetable-liver
mixture. Serve hot.
